What a wonderful site to see........

I just happened to look out my back window and seen a black patch moving through my back yard....... A clan of baby wood ducks. My guess is they hatched on Thursday and flew the coop on Friday on there way to the lake in search of mommy. What a cute site to watch as they follow moms call.

For those of you who do not know, these ducks nest in trees. The day after the ducks hatch they JUMP/LEAP out of the nest and head to the lake. Mom does not help them at all. They are capable of feeding and swimming on there own at this point. They can be as high as 20 ft up and can nest in a tree up to a mile away from water. Normally they nest over water, but it in not uncommon for them to nest away from it.

I cannot be more happy to have watched them as they journey down the yards to the lake. I am sad to say I did not get to see the leap, but then again I am not sure what tree they nested in. We have hundreds of old hollow trees that they could of picked from. I must keep my eyes open to see if I can see it, They again you can build wood duck nests to help them. HUMMMMMM maybe I will not have to look hard and can get them back.

Well I was sitting having my morning coffee and this little guy looked at me through the window as to say...... "Hey Lady... the feeder is empty!!" So I filled it and now wait for him to come back. This has to be my favorite of all the birds with the bluebird next.

Hi everyone!! I am attempting to put a little more effort into my little spaces on the world wide web. So in the coming weeks I hope to get alot done. I will be working on my blog, I want to start another blog for my love of cooking, and I finally opened a Etsy store and will be stocking it with items.

I also wanted to announce a new adventure that my fellow KSGP sista's and I are about to start~ our group website. It will be filled with the same wonderful items that we have been listing on ebay. Black Squirrel

I have lived here in Wisconsin for over 40 years and have never seen one of these little critters. My mom has seen glimpsis of them but never up close. A black squirrel.

I was walking through my living room and caught this little fella outside hunting for nuts. What a beautiful little guy!! I hope he stays the winter. Imagine the wonderful pictures he will take with the white snow..........

Here is a new recipe .........

~*~Pennsylvania Pot Roast~*~

2 1/2 - 3 lbs boneless pork shoulder roast

1 TBSP cooking oil

6 small parsnips, peeled adn quartered

2 small sweet potatoes, peeled and quartered

1 small onion, sliced

1 cup beef broth

1/2 cup apple cider or apple juice

1 tsp dried basil, crushed

1 tsp dried marjoram, crushed

1/2 tsp salt

1/4 tsp pepper

2 small cooking apples, cored and cut into wedges

1/2 cup cold water

1/4 cup all-purpose flour

1. Trim fat. In large skillet heat oil over med. heat. Brown meat on all sides. In a 4 1/2 - 6 qt slow cooker combine parsnip, sweet potato, and onion. Place meat on top. In med. bowl combine broth, apple cider or juice, basil, marjoram, salt and pepper. Pour over meat.

2. Cover and cook on low seting for 7 - 9 hours or on high for 3 1/2 - 4 1/2 hours, adding apple wedges the last 30 minutes of cooking. Remove meat, veggies and apples to serving platter; keep warm.

3. For gravy skim fat from liquid. Strain through a fine mesh sieve. Measure 1 3/4 cups of the liquid; pour into a med. saucepan. In a small bowl stir cold water into the flour, mixing well. Stir into liquid in saucepan.
Cook and stir until thickened. Cook and stir 1 minute. Season to taste. Pass Gravy with meat. Makes 6 servings.

And for dessert........

~*~Apple Snack Squares~*~

2 cups sugar

2 eggs

3/4 cup vegetable oil

2 1/2 cups self rising flour

1 tsp ground cinnamon

3 cups diced peeled tart apples

1 cup chopped walnuts

3/4 cup butterscotch chips

In a bowl, combine sugar, eggs, and oil. Mix well. Stir in flour and cinnamon (batter will be thick). Stir in apples and nuts. Spread into a greased 13 x 9 baking pan. Sprinkle with chips. Bake at 350 for 35 - 40 min. or until golden brown and a toothpick inserted near the center comes out clean. Cool before cutting.

** as a subsititute for each cup of self-rising flour place 1 1/2 tsps of baking powder and 1/2 tsp of salt in a measuring cup and fill with all purpose flour to equal 1 cup.

I will only say this..... I am glad it is over. Change either way is going to be hard but needs to happen! There is Good and Bad on both sides. Lets hope the future is better for the choices we make today!

I love soups and stews this time of year. With all we have to do to prepare for winter it is perfect to put a pot or crockpot on and come back and enjoy!!!

Here is another one of my favorites....

French Onion Soup

6 Large Onions
1/2 cup butter
6 (10 1/2 oz) broth, undiluted
1 1/2 teaspoon worcestershire sauce
3 bay leaves
French Bread-- sliced
Mozzeralla slices and parmesan cheeses

In large skillet saute onions in butter until crisp tender. Transfer into ungreased 5 qt. crockpot. Add the broth, worcestershire sauce and bay leaves.

Cover and cook on low for 5-7 hours or until the onions are tender. Discard the bay leaves. Spoon into oven safe bowls, place french bread over and top with sliced mozzeralla cheese and the parmesan cheese. Place under the broiler until lightly browned.... ENJOY!!

What I do is after it has cooked, I will taste it, If it is a little weak I will sprinkle graulated beef stock (wylers) until desired taste.

I have only had to do that 1 time in all the years I have been making it. It depends on the beef stock you use. Happy Eating!!

~~Another Beautiful Fall Day~~

It is going to be a beautiful day here in Southern Wisconsin. Fall always brings something different all the time. I LOVE the colors. It is time for the leaves to start turning. Cannot get any better!!

Today's menu is this easy quick soup with ham and asparagus.

~Creamy Ham and Asparagus Soup~

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

1 1/2 cups fresh asparagus pieces

1 med. carrot julienned

2 Tbsp butter

3 small white onions, quartered

2 Tbsp all purpose flour

1 Cup milk

1 Cup chicken broth

1 Cup cubed fully cooked ham

1 jar (2-1/2 oz) sliced mushrooms drained

1 Cup half and half cream

Salt & Pepper to taste

Grated Parmesan Cheese ~ optional

Chopped fresh parsley ~ optional

Place asparagus in a saucepan with enought water to cover; cook until crisp-tender. Drain, set aside.

In a heavy saucepan, saute carrots in butter for 3-5 min; add onions and saute 2 minutes longer or until tender.

Stir in flour; gradully add milk. Bring to boil; boil and stir for 2 min. Add broth, ham, mushrooms and reserved asparagus.

Reduce heat; add cream. Heat through but do not boil!! Add salt adn pepper. Garnish and serve!!

I normally serve with a crusty roll! This is perfect for 2-3 people. If you have a bigger family I would double the batch!!

It is time to start thinking about Christmas, As you think of the holidays, what are some of your favorite memories .......Traditions......gifts......

As we slide into the holiday season, lets remember that not everyone has these things. As we are doing our holiday shopping this year try to remember those who have much less and pick up a little something to donate. It is not the size of the gift, but the gift itself. Whether it is food donations or toys, donating old coats, money, or by picking a wish tag off a xmas tree we are giving part of us and hopefully passing along a good tradition. In the economic times that we are in, It is even more important to think of others and maybe sacrficing a little of ourselves to help someone have a better holiday.

Something Good from the Kitchen

Lasagna

1 1/2 lbs Ground Beef

1 (28 oz) can whole tomatoes

1 (12 oz) can tomato paste

2 tsp. garlic salt

1 1/2 tsp oregano leaves

1 tsp basil leaves

2 cups creamed cottage cheese

1/2 cup grated parmesan cheese

3 packs (4 oz) shredded mozz cheese

12 oz lasagna noodles cooked and drained

1/2 cup parmesan cheese

Cook meat until brown, drain fat. Add tomatoes, breaking up with fork and knife until small pieces. Stir in t. paste, garlic salt, oregano, & basil. Heat until boiling, stirring occasionaly. Reduce heat & simmer uncovered 20 min or until mixture is spag. sauce consistancy.

Heat oven to 350. Stir together cottage cheese & 1/2 cup parmesan cheese. Set aside 1 cup of meat mixture and 1/2 cup of mozzerella cheese.

In ungreased 13 x 9 pan alternate layers of each 1/3 noodles, meat mixture, mozz cheese and cottage cheese mixture.

Spread remaining meat sauce over top of last layer of noodles, sprinkle with reserved mozz cheese.

Bake uncovered 45 min. Let stand 15 min. before serving.
